Add the chocolate and stir until melted and smooth; remove from heat.
Sift in cocoa powder and stir until combined.
Wrap heavy duty aluminum foil around the outside of the pan to guard against leaks. Line the bottom with parchment paper. In a medium saucepan, heat the butter with ¼ cup of the heavy cream over medium-low heat until the butter is melted.
