How To Crumb Coat A Cake. A crumb coat acts as a barrier between the cake itself, and the decoration, making it so much easier to decorate the cake. If all goes as planned, then the crumbs should easily stick to the thin icing layer.
Once the whole cake has been covered in its crumb coat, allow it to chill, in the fridge, for at least one hour. Set aside a small clean bowl for excess frosting. Use the offset spatula to spread a thick layer of additional buttercream onto the sides of the cake while continuously rotating the turntable.
You do not need to add coloring to the crumb coat, as it will not be visible once the cake is finished.
Once the cake is cooled, you can freeze it to make stacking and crumb coating easier.
Hint: If you touch the crumb coat with the tip of your finger and your finger comes away clean, it's good to go. You want the frosting to set and harden enough that you can apply frosting to it easily, without any drag or sticking. Place your cakes on a cutting board in front of you and with your knife level to the table, turn the cake into the blade without moving the knife.
